Cranberry Pistachio Goat Cheese Balls

- 8 ounces goat cheese
- 8 ounces cream cheese
- 2 cups pistachio nuts, chopped fine
- 1 1/2 cups cranberries, dried, diced small
- 12 ounces pretzels, sticks
Directions:
- Combine the goat cheese and cream cheese using an electric hand mixer.
- Form small balls using a scooper or small spoons (about 1 1/2 teaspoons cheese per ball).
- Place on a plastic lined sheet pan and chill in the refrigerator for 30 minutes.
- Finely chop the cranberries.
- Finely chop the pistachios and sift away the fine particles.
- Combine the chopped cranberries and pistachios.
- Roll the cheese balls in the cranberries and nuts. Press the coating into the cheeseballs. The cheeseballs can be prepared up to this stage 4 days ahead.
- Just prior to serving, insert a pretzel stick into each cheeseball. Serve with the pretzel sticking up on an attractive platter.
- Makes 82 balls, or 40 servings.
