Jalapeno Creamed Corn
Ingredients:
- ¼ cup butter
- 2 large jalapenos, cut in half, seeded, and minced
- 1 tablespoon garlic, minced
- 8 ounces cream cheese, softened
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup half and half
- 1 tablespoon smoked paprika
- 2 pounds corn kernels (fresh off the cob, frozen, or canned…it will taste great no matter what you use)
Directions:
- Sauté the minced jalapeno and garlic in the butter. Stir often. Add the softened cream cheese and combine thoroughly. Add the seasonings. Add the corn kernels to it, and bring it to a simmer. Let it cook for 10 minutes, stirring often.
- Transfer to an attractive baking dish.
- Bake uncovered for 30 minutes at 350 degrees.
Serves 8.
