Green Beans with Lemon Browned Butter Sauce
- 2 pounds green beans, petite, cleaned and trimmed
- 1/2 cup butter, salted
- 1 large lemon juiced and zested
Directions
- Bring a large pot of water to a boil. Add 3 tablespoons salt.
- Once water is boiling rapidly, add green beans and boil for 3 1/2 to 4 minutes. Stir once or twice. Pour green beans into a colander and drain well. Transfer to an attractive ceramic casserole dish. (can be done 2 days ahead).
- In a saucepan, melt the butter over moderate heat. You will need to stir constantly to prevent burning. It will begin to darken and smell nutty. Remove from heat. Set aside to cool.
- Using a Microplane zester, gently zest the lemon. Set zest aside. Cut lemon in half and place in a glass dish. Microwave for 2 1/2 minutes to release the juices. Strain the lemon juice to remove seeds.
- Once butter has cooled, add the lemon zest and juice. Can be made 5 days ahead. Store in the refrigerator until ready to use.
- Green beans can be warmed in the oven, at 350 degrees for 20 minutes.
- Melt the lemon butter in the microwave until very hot. Stir well and pour over the green beans.
- Serve immediately.
