Smoked Mac & Cheese

- 1 pound 8 ounces penne pasta
- 2 sticks butter
- 1 pound smoked cheddar cheese, it’s best if you grate it yourself
- 4 cups half and half
- 1 pound velveeta cheese, cubed
- 1/2 teaspoon mustard, dry, Coleman’s
- 2 cups potato chips, (for topping) Cheezits, or Cheetos, crushed
- 3 cups wood chips, cherry, soaked for 1 hour
- heavy duty foil, or smoker box for grill
- large foil pan
Directions
- Boil pasta according to directions. Drain well.
- Melt the butter over low heat. Add Velveeta and melt over low heat. Stir often, because it burnseasily.
- Add the half and half, then the shredded smoked cheddar cheese. Use a small strainer to sift the dry mustard powder into the cheese sauce.
- Add the cooked pasta to the cheese sauce. Stir well. Pour into a large foil pan.
- Sprinkle with the crushed potato chips.
- Preheat your smoker or grill to 350.
- Place pan of mac on the grill and smoke for 30 minutes.
