Pork Chops with Bacon Vodka Cream Sauce

- 2 pork chop, bone-in, large loin chops
- black pepper
- kosher salt
- 2 tablespoons butter
- 2 tablespoons olive oil
- 3 tablespoons chicken base, (Better Than Bouillon chicken)
- 2 ounces vodka, plain, from Heritage Distilling
- 2 ounces bacon vodka, from Heritage Distilling
- 3/4 cup heavy cream
- 1/3 cup mustard, coarse ground, Inglehoffer Mustard from Beaver Food
Directions:
- Salt and pepper pork chops on both sides. Add butter to pan and heat on high.
- Sear chops in skillet until very brown. Remove chops from the skillet and set aside.
- Add both vodka and bacon flavored vodka to skillet and deglaze the pan.
- Add chicken base (do not dilute) and cook until slightly thickened. Stir in the cream
- and mustard. Turn heat up to high. Stir well to dissolve the mustard. Boil for about 3
- minutes to thicken the sauce.
- Pour over the pork chops and serve immediately.
