Oregon Halibut with Garlic & Herbed Butter

- 1/2 cup butter, at room temperature, salted (1 stick)
- 2 garlic clove, minced
- 3 tablespoons flat leaf parsley, minced
- 3 tablespoons chives, minced, fresh
- 1 teaspoon grated lemon zest
- Jacobsen sea salt and freshly ground black pepper
- 2 pounds about 1 inch thick, halibut fillets, at room temperature
Directions
- Preheat the oven to 375 degrees.
- For the herb butter, in a medium bowl, combine the butter, garlic, chopped herbs, and lemon zest plus salt
and pepper to taste. Mix thoroughly and transfer to a small saucepan. - Heat the olive oil in a grill pan over high heat. Sprinkle the halibut generously on both sides with salt and
pepper. Prepare a ceramic baking dish by smearing a tablespoon of the butter on the bottom. - Place the fish into the baking dish, and sprinkle with sea salt and black pepper.
- Then, heat the herb butter just until melted.
- Pour melted herb butter over the fish.
- Place the casserole into the hot oven. Bake for 18 minutes. Fish should be just slightly firm.
